Here is a copy of my Xorg.0.log from it happening (repeatedly):
The screen stayed blank until I either changed virtual terminals or alt-tabbed to chromium.
I captured a nvidia-bug-report.log.gz from my system which might or might not have additional useful information. If there is some way I can send it to Eve, please let me know.
To give a break run down of the Xorg.0.log:
At some semi-random point (random while playing Super Auto Pets, but semi-random since only Super Auto Pets is affected), the driver reports that all display connections are disconnected. In specific, here is output for the port that the spectrum uses (note it is connected via HDMI on my Asus GeForce RTX 3080 Strix, despite the DFP-2 port name):

Then less than a second later, it registers the Eve Spectrum:

It then prints the status of all ports, which again includes the Eve Spectrum. Following that, it prints:
[ 34775.927] (II) NVIDIA(0): Setting mode “NULL”
A NULL mode would be why there is a blank screen. Then I alt-tab to chromium and it prints the status of all ports again, followed by:
[ 34776.241] (II) NVIDIA(0): Setting mode “HDMI-0: 3840x2160_144 @3840x2160 +0+0 {AllowGSYNCCompatible=On, ViewPortIn=3840x2160, ViewPortOut=3840x2160+0+0}”
This is why I suddenly get the screen back.
Looking at it, I suspect a bug in the nvidia driver (as why only in Super Auto Pets?), so I also reported this to Nvidia.
